Searching for the Under-50 Consumer. Tony Roma’s unveiled the first of its revamped and newly named Tony Roma’s Fire Grill & Lounge locations in Orlando, Fla.,  with a new modern look and a revamped menu aimed at winning over the under-50 crowd. The chain will spend $600,000 per restaurant to renovate two more locations in Florida next year, before deciding whether to take the changes national, the company said. Tony Roma’s, one of the country’s first casual dining chains, has gone back into growth mode after shrinking from 160 to 39 U.S. units; the chain will open a new restaurant in Brooklyn this week and add several more over the next few years.
