Chains Weigh Pros and Cons of 24-Hour Operations

Restaurant franchisees stand to bring in more sales in some markets by operating around the clock, but they will also pay more in wages and overhead to serve a less-than-regular late-night clientele, experts say. Franchisees for chains including McDonald’s and Dunkin’ Donuts have dramatically increased the number of open-all-night outlets and Peter Riggs, vice president of brand promotion for Pita Pit USA, argues the hours can work if franchisees study the rhythm of the neighborhood before implementing extended hours. “You can’t take the lifestyle of a certain demographic and universally apply it to everyone,” Riggs said
